Best Swedish Meatballs

Process

In a large, nonstick frying pan, melt 1 tablespoon of butter and sauté the onions. Remove the pan from the heat and let the onions cool down until they are tender and transparent.

In a big bowl, mix together pork, beef, eggs, panko, salt, pepper, and nutmeg. Add the onions to the mixture once they have cooled a little, then thoroughly combine everything with your hands.

Form into one-inch meatballs, making sure to roll them tightly to maintain their round shape. Put the meatballs onto a tray or dish.

Melt a tablespoon or two of butter in the same skillet you sautéed the onions in over medium heat. When the pan is heated, add the meatballs and fry them in batches so they don't get too crowded. To make sure the meatballs roll about and keep their meatball shape, shake the pan as soon as you add a batch.

Fry the meatballs until they are cooked through and golden brown, shaking the pan occasionally. While the meatballs cook, remove them from the pan.

After the meatballs are cooked through, prepare the sauce: Melt the two tablespoons of butter in the pan over medium heat. Add the flour, stir, and cook for one to two minutes. Add the cream and beef stock slowly while whisking continuously until the sauce begins to thicken. If used, taste and add more salt, pepper, and soy sauce for seasoning.

Present the meatballs alongside the cucumbers, lingonberry jam, and cream sauce.

Ingredients

  • 2-4 tbsp butter
  • 1/2 medium onion finely diced, about 1/2 cup
  • 1 lb ground pork
  • 1 lb ground beef
  • 2 eggs lightly beaten
  • 1/2 cup panko
  • 1 tsp salt
  • 1 tsp freshly ground pepper
  • 1/4 tsp freshly grated nutmeg

Cream Sauce

  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup beef stock
  • 1/2 cup heavy cream
  • 1 tsp soy sauce
  • salt and freshly ground pepper

Remarks

  • Modified from Say It in Swedish and Swedish Food
  • Meatballs that have been somewhat flattened can sear without needing to be shaken if that is okay with you.
  • Makes around 40 meatballs, about ten for each individual.
