The following ingredients are required to prepare Shahi Tadka Dal.

Please note that this recipe serves four adult individuals.

  • ½ Cup Toor Dal
  • ⅓ Cup Chana Dal
  • ⅓ Cup Masoor Dal
  • ¼ Cup Urad Dal
  • 1 TBSP Grated Ginger
  • 1 TBSP Grated Garlic
  • Ghee
  • 2-3 Dried red chillies or 1-2 Fresh green slit chillies
  • 1 Finely grated Onion
  • 1 Finely Chopped Tomato
  • 1 TBSP Red Chilly Powder
  • ¼ TSP Turmeric
  • ½ TSP Garam Masala
  • ½ TBSP Kasuri Methi
  • Salt
  • 1 TBSP Cumin Seeds
  • Ginger Juliens (5-6)
  • Asafoetida

Instructions to Cook

Thoroughly cleanse and soak the lentils in an ample amount of water for a minimum of 1-2 hours. In the event of time constraints, the lentils may be soaked in hot water for 30 minutes. However, it is imperative to cleanse the lentils meticulously 4-5 times prior to soaking.

Subsequently, drain the water and set the lentils aside.

In a pressure cooker, heat a tablespoon of ghee. Once heated, add a teaspoon of cumin seeds and ginger juliennes. Allow the cumin seeds to splutter before adding the lentils and two cups of freshwater. Add a teaspoon of salt and a quarter teaspoon of Haldi to the pressure cooker. Thoroughly combine the ingredients and seal the lid. Cook the lentils on medium-high flame for 4-5 whistles.

In a separate pan, heat two tablespoons of ghee. Once heated, add a tablespoon of cumin seeds and allow them to splutter. Immediately add a quarter teaspoon of Asafoetida and a tablespoon of ginger garlic. Cook the mixture for two minutes on medium flame. Note that high flame may burn the Tadka and compromise the flavors. Add dried red chillies and sauté for a few seconds.

Add finely grated onion to the pan and cook until translucent. Next, add the spices - Turmeric, red chilli powder, and garam masala. Thoroughly combine the ingredients.

Add chopped tomatoes to the pan and cook until soft and mushy.

Meanwhile, depressurize the pressure cooker and check if the lentils are ready. Whisk the lentils with a Baloon whisk for a minute to achieve a velvety creamy texture.

Empty the lentils from the pressure cooker into the pan. Thoroughly combine the ingredients and allow the flavors to immerse by cooking the dal for 6-7 minutes.

Add Kasuri Methi and salt to the dal as per your taste.
