Similar to other homemade beverages, the Falooda Recipe is prepared regularly in my household, as both my children and I adore its cooling taste and creamy consistency. To craft this divine drink, one must gather a few essential ingredients, including milk, jelly, rose syrup (or any preferred syrup), falooda sev, falooda seeds, ice cream (preferably vanilla), and pistachios (or any desired dry fruits).

To commence the preparation of this recipe, certain preliminary steps must be taken. Initially, transfer the milk and sugar into a deep and thick-bottomed pan, allowing it to boil over medium heat before reducing the flame to a simmer. Continue boiling until the milk reduces to 1 1/2 cups. Subsequently, incorporate 1 1/2 to 2 tablespoons of rose syrup into the milk, ensuring thorough mixing. Once the mixture has thickened, turn off the flame and allow it to cool to room temperature.

In the interim, prepare the jelly in accordance with the instructions provided on the packaging. Allow it to cool and refrigerate. After cooling, dice the jelly into small cubes and reserve.

Subsequently, heat a saucepan with water over medium heat and bring it to a boil. Add the falooda sev to the boiling water to soften it. Once cooked, strain the water and transfer the sev to a bowl of cold water. (Alternatively, the sev may be refrigerated.)

  • Next, transfer the cornflour paste onto a medium-sized sieve and press it with a spoon to form the sev. Ensure that the pressed paste falls into iced water in shreds. Leave it for 30 minutes, then drain. The sev is now ready to be used for Falooda or Kulfi.
  • To prepare the falooda recipe, soak the falooda seeds in a cup of water for 30 minutes and allow them to bloom. Set them aside. Chill the serving glasses in the freezer for half an hour.
  • To assemble the falooda recipe, take the chilled serving glass and add a generous tablespoon of rose syrup or roohafza. Add two tablespoons of jelly cubes, followed by two heaped tablespoons of bloomed falooda seeds. Next, layer with 1/4 cup of falooda sev.

Slowly pour the chilled rose milk until it reaches 3/4th level of the glass. Then, add two scoops of vanilla ice cream on top.
