Best Fried Dhokla Recipe | How To Make Masala Dhokla

Khaman dhokla with a twist, also known as Fried Dhokla or Masala Dhokla Recipe, is a highly popular and beloved snack that is sold on almost every street in Gujarat.

Its sweet and tangy flavor has made it widely available throughout the country, not just in its region of origin. Masala Dhokla, or Fried Dhokla, is a traditional Gujarati dish with a sponge-like texture and is flavored with a spicy tempering and coconut. Khaman Dhokla is a type of dhokla recipe that is soft, tangy, sweet, sometimes spicy, and spongy, making it a healthy option for starting your day along with other morning snacks.

Fried Dhokla, or Masala Dhokla, is similar to my previously shared recipe for Idli fusion - Masala Idli recipe. In this recipe, I have used leftover dhoklas and added various vegetables and spices for tempering.

The base for this Masala Dhokla Recipe is Besan Dhokla or Khaman Dhokla, and I am using pre-made dhokla cakes. Khaman Dhokla can be prepared with either chana dal or besan flour, both of which are nutritious and a good source of protein and fiber. This recipe is also gluten-free.

To make Fried Dhokla or Masala Dhokla, you will need simple and easily available ingredients such as gram flour, curd, salt, chili powder, garam masala, sugar, ginger, garlic, tomato, mustard oil, fresh curry leaves, green chilies, mustard seeds, tomato ketchup, shredded coconut, and coriander leaves.

To prepare the recipe, start by using already prepared leftover dhokla cakes. You can also make fresh besan dhokla or any other version of dhokla for this recipe. Heat a pan and add vegetable oil, preferably mustard oil, followed by mustard seeds, fresh curry leaves, and halved green chilies.

Then, add a paste made from ginger, garlic, and tomato to the pan and cook until the paste thickens. Season the puree with salt, chili powder, garam masala, sugar, and tomato ketchup. Add water and let it boil for 5 minutes. Finally, add the dhokla cakes to the masala, coat them with the puree, and garnish with shredded coconut and coriander leaves or finely shredded green chilies. Serve hot or cold with green chutney or dahi dhaniya chutney.
