Fight me Corn cheese is the best side dish for KBBQ! I adore corn and melty cheese together, and the combination is incredible. In essence, it's a warm, golden mixture of canned corn, butter, mayo, sugar, and cheese baked in the oven. It's a traditional Korean anju, or meal infusion. Simply use a spoon to scoop it out and put the delight in your mouth. It's cheesy, savory, and sweet, kind of like fondue with chunks of sweet corn.
Process
Set oven temperature to 400°F. Combine the drained corn, sugar, melted butter, mayo, and half of the cheese in a bowl. Add 1/4 cup of chopped green onions, if preferred. Use salt and pepper to taste and season.
Transfer the corn mixture onto a pan or ovenproof dish, then sprinkle the leftover cheese on top.
Bake for ten minutes, or until the cheese is melted, in the oven. For one to two minutes, broil on high, or until the top is browned and toasted. Take out and savor!

- 1 tbsp. butter melted
- 1 tsp. sugar
